Description: Bolder, more medicinal, and less sweet than maple syrup, birch syrup can taste like molasses, caramel, malt, licorice, - even balsamic. Taste and colour are influenced by the time of sap harvest with early season harvesting producing the lighter coloured, sweeter tasting syrup. Every batch of syrup is slightly different in taste and sugar/nutrient composition, and each producer may evaporate it to different standards.
To reduce production time and costs, most producers sell a blended product by adding a sugar (fructose or sucrose). Or they stop evaporating at about 60 degrees brix. Nothing is added to Kispiox Creations’ birch syrup. Our syrup is a pure concentrated product reduced to 61 to 67 degrees brix, the point just before carmelization would occur. Refrigeration after opening is recommended.

Birch syrup is an amazingly versatile ingredient in both sweet and savoury dishes; simple and complex recipes! Try substituting birch syrup in recipes that call for simple syrup (sugar and water).
Salmon and birch syrup complement each other extremely well. Syrup glazes can be applied before or after the fish has been cooked.
Kispiox Birch Salmon
Drizzle 1-2 tsp. pure Kispiox birch syrup over a fresh salmon filet. Use a fork to pierce the syrup into the filet. Marinate in refrigerator for at least 4 hours. Sprinkle fish lightly with ground cumin and finely diced onions. Bake for 25-28 minutes uncovered. Garnish with finely sliced onion or chopped fresh cilantro.
Birch Syrup Glaze
Whisk together 2 tbsp birch syrup, 2 tbsp grapeseed oil, 2 tbsp lemon juice, 1 tbsp light soy sauce, half a clove of minced garlic and 1/4 tsp minced fresh ginger. Pour over broiled salmon or white fish.
Easy Dip or Glaze
Mix 2 tsp birch syrup and 1/2 c mayonnaise with a dash of your favourite hot sauce and use as a dip for fresh vegetables or french fries. As a glaze, spread mixture over canned salmon; heat in the microwave or broil in the oven.
Birch Syrup Vinaigrette Salad Dressing
In a small bowl, whisk together 3 tbsp canola oil, 1 tbsp extra-virgin olive oil, 1 tbsp red wine vinegar, 1 tbsp birch syrup, 1/2 tsp dry mustard, pinch each of sugar, salt and pepper.
Birch Syrup Chipotle Compound Butter
Stir together 1/2 lb softened unsalted butter, 2 tbsp birch syrup and 1 tbsp dried chipotle flakes. Roll into a log, cover with plastic wrap and chill until hardened. Cut into coins and serve on steak.
